Fresh cassava tubers. Sold per Kg. Ideal for several African and Afro Caribbean dishes. Size and maturity of cassava supplied may be different from that displayed here.



Cassava tuber refers to the carbohydrate rich root of the cassava plant called Manihot esculenta. It is a woody brown barrel shaped root measuring any thing between 7cm to 50 cm long and 5cm to 10 cm wide in diameter. The core is usually white, with a fibrous cord running through the center of the tuber. When properly processed, it is highly nutritious, rich in vitamins and carbohydrate.



It is indeed the major source of Carbohydrate starch in many African countries, with the largest cultivation of this crop occurring in Africa. It is also popular in South America and some parts of Asia.



Cassava tuber can eaten as a vegetable but must be cooked or left to ferment or at the least, left soaked in water for 6 to 12 hours to allow the cyanide content be broken down and make the cassava non-toxic.



Products made from cassava roots (tubers) includes gari cassava, cassava tapioca, cassava fufu, cassava chips, cassava flour for confectioneries and bread. Ethanol is also made from cassava for biofuel and other uses.
